Gin, EAUDEBEURRE Infusion*, Elderflower Liqueur, Fresh Lemon Juice, Egg White

*EAUDEBEURRE Infusion

Steep 8 oz EAUDEBEURRE blend
Strain blend into pot
Add 2.5 tsp of sugar
Mix until sugar dissolves
Cool for 10 minutes

Procedure

Pour 60 ml gin into cocktail shaker
Add 70 ml EAUDEBEURRE infusion into cocktail shaker
Pour 15 ml elderflower liqueur into cocktail shaker
Squeeze 15 ml of fresh lemon juice into cocktail shaker
Add one egg white to cocktail shaker
Dry shake for 15 seconds to emulsify egg white
Add ice into cocktail shaker
Shake for 15 seconds
Double strain directly into glass
